Leeks in Europe are grown much differently than they are in the United States. In the United States, leeks are simply planted by seed and left to grow. Very little of them are edible and they develop a strong flavor. This is how the Europeans grow leeks and this is the right way to do it. Plant the seed in rows and leave the leeks grow until they are about 15 to 18 inches high. Then wet the ground and carefully pull them all up so you do not damage the roots. Then with a stick or pipe about an inch and a half in diameter, make deep holes about 12 inches deep in rows in your garden. Stick the leeks down the holes, pack dirt around them and water them well. This way the leeks develop a long, white mild body. It has a mild flavor that vaguely resembles the flavor of an onion but is a good deal different.
